Colorful Stripe Divider

Recipe: Chicken Andouille Gumbo

List of Ingredients:
Two whole chickens, boned & diced
1 Pound Andouille sausage, sliced
1/2 Pound Okra pods, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 large yellow onion, diced
2 stalks celery, diced
2 large tomatoes, diced
2-3 green onions, diced
3-7 garlic cloves, smashed & minced
Cooking Instructions:
1. In a large pot, cook 2-2 1/2 Quarts Chicken stock*
2. Saute Okra in 1/2 cup oil until okra is limp
3. Remove and set aside
4. Add chicken to pan and brown on high heat, add additional oil if needed.
5. Remove chicken, add 3 Tblsp flour and oil and make a roux
6. When roux is mahogany/chestnut-colored, add veggies and simmer until onions clear
7. Add tomatoes and stir unitl completely blended
8. Put veggies/roux mixture into pot of stock and bring to a boil.
9. Reduce temperature and stir often
10. In a separate pan, brown andouille slices then add to soup pot
11. Cook low for 3-5 hours, stirring often and adding water as needed

Serve over rice with beans & cornbread on the side and you're rocking!


*If using whole chickens, you can use giblets/backs and wings to make stock,Discard pieces and feed the cat with them.
