Colorful Stripe Divider

Recipe: Favorite Potato Salad

List of Ingredients:
4-5 Lbs russet or red potatoes
5 hard boiled eggs
1/3-1/2 cup red wine vinegar
1/3 cup mayonnaise
1/4 cup spicy brown mustard
2 Tbsp paprika
2 Tbsp crushed dill
1-2 Tbsp ground pepper
1 Tbsp garlic powder
Cooking Instructions:
1. Cut potatoes into halves or quarters, place in a large soup pot full of water. Bring to a boil and cook until the potatoes can easily have fork passed through them.
2. Drain potatoes and cut into smaller, bite-sized pieces and place in a large mixing bowl.
3. Drizzle the vinegar over the potatoes (Family secret - do this while the potatoes are still hot) stirring occasionally.
4. Slice the eggs along both axes with an egg slicer and add to potatoes, then stir in the mustard and mayo.
5. Add the pepper, garlic powder, dill and most of the paprika and mix until you get a nice, uniform texture. Add a bit more vinegar, mayo or mustard to taste, if desired.
6. Refrigerate for an hour or so.
7. Before serving, transfer everything into a nicer serving bowl and sprinkle the remaining paprika on top
