Recipe: Braised Sweet and Sour Pumpkin
List of Ingredients:
1 2 1/2–3 Lb. pumpkin, peeled, seeded, and cut into 1-inch cubes
1 Medium onion, chopped
2 Tablespoons of fresh mint leaves
1/4 Cup water
3 Tablespoons cider or rice wine vinegar
2 Tablespoons brown sugar
Salt and ground black pepper to taste
Cooking Instructions:
1. Preheat oven to 350ºF
2. Set a small amount of mint aside for a garnish
3. Mix all ingredients thoroughly and pour into a 2-inch baking pan. Cover with foil and cook for 30 minutes
4. Uncover and cook until pumpkin is tender, add water if it seems dry.
5. Add salt and pepper, garnish with remaining mint and serve
